MISSON
Veggie Mijas Chicago chapter is a collective that aims to make plant-based food accessible to communities of color and folks of marginalized identities. We wish to co-create a shame-free, body positive and inclusive space with folks who are committed to anti-racism, compassion toward animals, reconnecting with their ancestral roots, and fighting for our collective liberation.

Dani Medrano
She/Her
Dani Medrano is a Chicago-born and raised Duranguense scorpio who has been meat-free since ’02. She joined Veggie Mijas in 2019 after searching for community in all the wrong places. Dani has dedicated herself to co-creating shame-free spaces for folks of color to explore a plant-based lifestyle. Cooking for her people is her love language. She is easily mesmerized by all animals (even the creepy ones) but especially, her gatita Michi. -
Daniela Torres
She/Her
Daniela Torres is a Chicago resident, born and raised in Oak Park, Illinois. She has been vegan for 5 years. Starting her role as organizer in May 2021 at the time of our first plant based fridge launch; she wants to continue her commitment to support our brown and black communities in the Chicago area have access to plant based food. As well as continue to grow the Chicago Chapter in a shame-free space for those who want to learn/unlearn in their personal journey of going plant based and work on food and social justice in the Chicago area. -
Luisa Ibarra
She/Her
Luisa Ibarra is a resident of Little Village. In 2017, she saw a need to connect with POC vegans in Chicago for support during her transition to a plant based lifestyle. After hosting Veggie Mijas Chicago’s first vegan potluck, Luisa agreed to be lead organizer and continue to grow the Chicago Chapter collective to what it is today. She is passionate about food justice and ensuring POC have a safe and inclusive space to share their unique plant-based lifestyles.* -
Kari Sanchez
She/They
Kari is a proud Mexican-American. They are a Diversity, Equity and Inclusion (DE&I) professional and a program coordinator for Veggie Mijas Chicago. They are a vegan athlete who has completed 2 marathons and is a new biker and gym rat. She is also an ambassador for PYNRS, the only Black-owned running apparel brand. Kari is a lover of plantitas and is a current herbal apprentice with Urban Growers Collective. Their passions include cooking (and eating) vegan meals, spiritual gurlie things, going to concerts, cuddling with her cat and spending time in nature with friends.
